MY TOP 3 WAYS TO GET MORE GREENS IN YOUR DIET

One of the central elements of any healthy diet is eating an adequate quantity of greens, though many people do not consume enough green leafy vegetables.

I will confess that sometimes I lack in desire to eat my greens! There were days where I knew I didn’t get a sufficient amount even though I know how essential they are.

I started to implement 3 foolproof ways to increase my consumption of these “jewels” of nature. Here are my top 3 ways to get more greens into your diet:

1. Make Green Smoothies.

Green smoothies are one of my favorite ways to consume a large quantity of greens! I was a bit skeptical about blending fruit and greens, but I was pleasantly surprised by the result.

Here are some recipes that are delicious!

BERRY ROMAINE SMOOTHIE
Ingredients:
1 cup strawberries
2 whole bananas
1/2 bunch romain
1/2 to 1 cup water

Instructions:
Blend fruit and water. Add romaine lettuce. Enjoy.

TROPICAL GREEN SMOOTHIE
This smoothie is full of iron, potassium and vitamins AND it tastes like a tropical treat!
Ingredients:
1 cup spinach (fresh)
1 cup water
1/2 cup frozen pineapple
1/2 cup frozen mango
1 banana (peeled)

Instructions:
Tightly pack the spinach in a measuring cup and add to blender with water. Blend together until all chunks are gone. Add pineapple, mango and banana to blender. Blend all together until smooth and creamy.

2. Compile a recipe library of delicious healthy salad dressings.

It’s okay that sometimes our greens are merely salad dressing vessels! I started consuming more greens in my diet once I found some healthy dressings that I loved!

Here are a couple of salad dressing recipes to get you started. They are easy to prepare and VEGAN as well! ­čÖé

VEGAN RANCH:
Ingredients:
1.5 cup vegan mayo
1/4 cup non-dairy milk any unsweetened original flavor
1.5 tsp apple cider vinegar
3 cloves garlic crushed
1/2 Tbs dried parsley
1 tsp dried dill
1 tsp onion powder
1/2 tsp salt
1/4 tsp paprika
1/4 tsp pepper

Instructions:
Mix together all ingredients in a bowl. If mixture is too thick for your liking, you can just add a little more milk until you get the texture you prefer.

VEGAN TAHINI SALAD DRESSING:
Ingredients:
1/4 cup tahini
1/4 cup water
Juice of half a medium-sized lemon
2 cloves garlic, finely minced
Pinch of salt

Instructions:
Place all of the ingredients into a bowl and stir briskly until creamy. This can take 2 solid minutes of mixing and you’ll see it combine to form a thick and creamy dressing. This recipe is enough dressing to cover 2 large salads.

3. Stuff your sandwiches and wraps with greens!

This is pretty self-explanatory, but a great way to get extra greens is to add a handful or 2 to every sandwich or wrap you make. Also, even a taco, you can add a generous helping of greens and then smother with salsa! I tend to enjoy my greens in this form.

We all know that greens are good for us and we should strive to get more in our diet. I hope my top 3 ways to get more greens assists you in this goal. Enjoy!
