As I am trying to incorporate more apple cider vinegar in my diet, I wanted to share this easy, refreshing and delicious cucumber, tomato, and onion salad recipe! The dressing for this salad includes apple cider vinegar! Enjoy :)


2 English cucumbers, diced
1 pint cherry tomatoes, quartered
1 red onion, diced
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1 tablespoon apple cider vinegar
1 teaspoon granulated sugar or honey
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh dill, minced


  1. In a large bowl, toss together cucumber, tomatoes, and onion.
  2. In a small bowl, whisk together olive oil, lemon juice, vinegar, sugar, salt, pepper, and dill.
  3. Pour over cucumbers and toss to combine.
  4. Cover and refrigerate at least 1 hour before serving.
